While Dark Forces is only a so-so, DF2 is much more welcomed.
Its propritary 3D engine is obviously not what attracts the gamers. Graphics is a weak point in DF2. Even as a 1997 game, it does not deserve any praise other than that it is not slowing down the game. The pastel colors and lack of shadow or transitions make it look like a movie storyboard. No eye catching colors or effects, just good enough for you to play the game.
The most famous part of JK:DF2 are the Star Wars universe and the weapons. You have at your disposal the normal Storm Trooper and Rebel weapons. Plus of course, your Light Saber. Most people play the game only to have fun with the Light Saber, or to DeathMatch other gamers. Also you have the Force. Thirteen different Force Powers (like Force Pull, Force Throw, most of the things you have seen in Star Wars) adds yet another new dimension to the game.
While it is a FPS, you can optionally switch to 3PP to view over the shoulder. This is especially useful when using Light Saber, and the game has an option that allow it to swicth to 3PP mode automatically when you draw your Light Saber.
It is a in the Star Wars universe, but unrelated to the film episodes. Jedi Knight continues the story of Kyle Katarn (in Dark Forces) as he embarks on a quest into his past and learns the mysterious ways of the Jedi.
You play Kyle. Your father is the last Jedi Knight. The seven Dark Jedi led by Jerec killed him to get the data disc containing the location of the Valley of Jedi, a hidden Jedi burial ground. You want to revenge, and you also want the data disc back. You have to learn to use the Light Saber and the Force. And to decide your destiny.
Near the middle of the game, you have to choose you way: the Light Side or the Dark Side. If you choose the Dark side, you will claim the valley as your own and take up the place of Jerec yourself. If you choose the Light side, you faces seemingly insurmountable evil. You have to defeat Jerec and his dark servants to save the universe. And interesting enough, the Dark Side is more powerful and easier to follow, until the last level. In the very end however, it is easier to defeat Jerec when you are playing the Light Side.
On each level there are several secrets. You must find all the secrets to gain Force Stars. With Force Stars, you can allocate them to the Force Powers. The more Force Stars you have, the more types Force Powers are available to you, and the more powerful they are. There are a total of eight Force Power to which you can assign Force Stars (you do not need to assign any Force Stars to the last Force Power), each up to 4 Force Stars. You also gain two Force Stars automatically when you raise a Jedi level. This happens at specific game levels: level 6 Learner, level 8 Apprentice, level 10 Journeyman, level 12 Charge, level 14 Disciple, level 16 Jedi Master/Primarch, level 18 Jedi Lord or Dark Jedi Lord. The total nubmer of Force Stars you have is 31, but a program bug sometimes give you an extra Force Star after level 15, ending in 32 stars.

A site you must not miss: contains all you want to know about: how to fight with the Light Saber, how the weapons should be used, who are the seven Dark Lords, where the secrets are, etc: Trail's Guide to the Jedi Knight
It can hardly be called an addon: it is more like a separate game using the same interface, but requires the JK CD to run the first time.
Besides using an enhanced engine, several new weapons and Force Powers are added to MOTS, and the most interesting ones are the Carbonite Gun and Saber Throw. If there is a DF3, you can probably do everything the Jedi Master and the Sith Lords did in all the Star Wars films. The addon MOTS is set in a period five years beyond DF2. The game has only one path, but you play two characters. You started as Kyle Katarn. After playing the first four levels, a cut-scene transition introduces Mara Jade.
Mara is a rogue Jedi, and one-time servant to the Emperor, who has recently transitioned to the side of the New Republic. Kyle has discovered information about a previously unknown Sith Temple and must travel to it to investigate the mysterious forces it holds. You would start playing Mara for the remaining ten levels. The MOTS CD has a hidden bonus level, where you play Luke SkyWalker himself! You would fight against Dark Jedis and ride the Millenium Falcon. Refer to Lucas Arts for details.
In MOTS, you have five categories of Force Powers. When you increase in Jedi level, more and more powers are available for Force Star assignment. However, you cannot access all powers even at the end of the game. You can only assign four out of five powers from the first group (Jump, Projection, Seeing, Speed, Push), and two out of four powers from the remaining three groups (Pull, Sabre Throw, Grip, Far Sight; Persuation, Health, Blinding, Chained Lightning; Absorb, Destruction, Protection, Deadly Sight).
Although you can choose up to 10 Force Powers out of the available 17, you do not have 40 Force Stars. You only have 30 stars so assign them carefully during the game. You cannot finish the game without some essential Force Powers: Force Speed, Force Jump, and Force Seeing. If you do not plan to play the last few levels with god mode, Force Heal is very useful. Unless you are good at Sabre Duels, I would suggest Force Protection as well. The more agressive Forces like Chain Lightning and Sabre Throw are fun to play with (yes, do play with all Forces by reloading saved games for new Force Star assignments), but useful towards the end.
Since I haven’t found any description of the three new Force Powers, I would briefing explain them below:
